The idea of my restaurant is directly linked to childhood memories. I used to eat at my grandmother's farm on Sundays. We had big lunches, big tables, the whole family gathered in her small peasant farm.
I've always had the habit of eating simple, but good products. Products with taste, straight out of the garden, good vegetables, good fruits, good cheese, good bread...
And all these memories allowed me to appreciate the taste of a simple cuisine made with a lot of passion and love, and above all, a cuisine meant to be shared with friends or family.
And that's all those memories and this vision that I wanted to transcribe by opening L'Atelier. A simple
healthy cuisine with
quality products and of course selections of very
high-end and exceptional meats since that is the very concept of the restaurant.
L'Atelier means Workshop. I called my restaurant like that for several reasons.
First, l'Atelier is a place where we make things, we transform them from scratch with our hands.
Secondly, when we were at my grandmother's house, we cooked with her in a small room called l'atelier, a room of a real country farm with no hard ground, with chicken running around...
My restaurant is a childhood memory
and an
honor
to my tender age
and my grandmother.
The
concept of a meat restaurant was in my mind for a long time because I particularly appreciate meat, but not only. I wanted to set up this restaurant both
raw and
simple, but with a
superior quality in the
products' selection, the
friendly
service, and by creating a place with a
cozy atmosphere, something friendly where people really feel good.
